Every cafe has that one dish — the one people photograph before they eat, the one that shows up in every Instagram story, the one that brings new customers through the door because a friend told them "you have to try it." At Nuroh Cafe in Jaipur, that dish is our avocado toast. It's been our top seller since week one, and the story behind how it came together is something we love sharing.

How It Started: Not Another Avocado Toast

When we were developing the Nuroh menu, avocado toast was an obvious candidate. It's a cafe staple worldwide. But that was exactly the problem — everyone serves avocado toast, and most of it is forgettable. Mashed avocado on whatever bread was available, a sprinkle of salt, maybe some pepper. Functional but uninspired.

We wanted ours to be different. Not gimmicky-different with unnecessary toppings or fusion experiments, but fundamentally better in the ingredients and technique. Our kitchen team spent weeks testing combinations — different bread types, avocado preparations, egg styles, and finishing elements — before arriving at what you see on the plate today.

The goal was simple: every single component had to earn its place. Nothing decorative, nothing there just for colour. If it's on the plate, it contributes to the flavour.

Breaking Down the Dish

Here's what goes into every Nuroh avocado toast, and why:

The Bread — Sourdough from a Local Bakery: We use thick-cut sourdough that we source from a Jaipur-based artisan baker. It's naturally fermented, which gives it that characteristic tang and chew. We toast it on a flat grill — not in a toaster — so the outside gets properly crispy while the inside stays soft. The bread is the foundation, and cheap bread ruins the entire dish. We learned this early.

The Avocado — Ripe, Seasoned, Textured: We don't mash our avocado into a smooth paste. Instead, we roughly smash it to keep some chunky texture, then season it with good sea salt, fresh cracked black pepper, and a squeeze of lime juice. The lime isn't just for flavour — it prevents browning and adds a brightness that balances the avocado's richness.

The Eggs — Poached, Not Fried: Two poached eggs sit on top of the avocado, and getting them right is a non-negotiable. Our kitchen team poaches eggs to order — soft, runny yolks that break open when you cut into them and flow over the avocado and bread. This is the moment everyone photographs, and it's also the moment the dish transforms from good to incredible. That yolk acts as a sauce.

The Finishing Touches: Cherry tomatoes halved and slightly roasted, red chilli flakes for gentle heat, microgreens for a peppery bite, and a generous drizzle of high-quality extra virgin olive oil that ties everything together. Each element is small but essential.

Why It Works So Well

The magic of this dish is balance. You've got the creamy richness of avocado, the fatty lusciousness of runny egg yolk, the tangy crunch of sourdough, the brightness of lime and tomato, and the subtle heat from chilli flakes. Every bite hits multiple flavour and texture notes simultaneously. It's satisfying without being heavy, photogenic without being pretentious, and comforting without being boring.
