Where Our Coffee Comes From
India is one of the world's most diverse coffee-growing countries, and we are proud to source the majority of our beans domestically. Our primary sourcing regions include:
- Chikmagalur, Karnataka: The birthplace of Indian coffee. Estates here produce beans with chocolatey, nutty profiles and a smooth body. Our house espresso blend features a Chikmagalur washed Arabica as its backbone.
- Coorg, Karnataka: Known for its misty hills and rich soil, Coorg estates produce beans with a slightly fruity brightness that works beautifully in pour over brews.
- Araku Valley, Andhra Pradesh: A rising star in Indian specialty coffee. The tribal farming communities in Araku grow organic Arabica with distinctive berry and citrus notes. We source seasonal lots from here for our single-origin pour over programme at Nuroh Cafe.
- International micro-lots: Occasionally, we bring in small quantities from Ethiopian, Kenyan, or Colombian farms to offer our Jaipur guests a taste of global coffee diversity.
The Sourcing Process: How We Choose Our Beans
Not all coffee is created equal. Even within the same farm, different lots can vary dramatically in quality based on altitude, processing method, and harvest timing. Here is how we select what ends up on Nuroh Cafe's menu:
Cupping sessions: We receive samples from farms and conduct structured tasting sessions called cuppings. Each sample is evaluated on aroma, acidity, body, flavour, aftertaste, and overall balance. Only beans that score well across all parameters make it to our menu.
Direct relationships: Wherever possible, we work directly with farm owners or small cooperatives rather than going through large commodity traders. This gives us more control over quality and ensures that a fair price reaches the people who actually grew the coffee.
Seasonal rotation: Coffee is an agricultural product with seasons. Rather than serving the same beans year-round and watching quality degrade, we rotate our offerings based on harvest cycles. This means the single-origin pour over you had at Nuroh Cafe in January might be different from the one in July — and that is a feature, not a bug.
Roasting: Where Science Meets Intuition
Once green beans arrive in Jaipur, the roasting process transforms them into something drinkable. Roasting is part science and part art — temperature curves, airflow, timing, and sensory evaluation all come into play.
At Nuroh, we work with a dedicated roasting partner who understands our flavour preferences. Each origin gets its own roast profile. A delicate Ethiopian is roasted lighter to preserve floral and fruit notes. A robust Indian Monsoon Malabar gets taken darker to bring out its earthy, spicy character. We roast in small batches to ensure freshness — our beans are typically used within two to four weeks of roasting.
